About Hazelnuts

Our company strives to enhance production modes and rural lifestyles in the high lands of the province (specifically in the Korgan area with its 500 meters of altitude), which offers the best adaptation capability possible to our main product: Turkish hazelnut.

Also known as “Çakıldak” or “Delisaya” in the western Black Sea region, Turkish hazelnut (Corylus Avellana) is notorious for its adaptation to extreme climate and harsh soil conditions. This standard cultivar is widespread in our province and is produced in large quantities owing to its tolerance to late spring frosts, and it has very late bud burst compared to other cultivars.

 

Our Delicious Hazelnuts

All of the skin by-products of Turkish hazelnuts, being remarkably rich in phenolics, are proposed as an excellent source of natural and powerful antioxidants.

This product of ours is a forest tree species playing a key role in climate change scenarios inasmuch as it adapts to almost all ecological conditions and has a very high yield and large nut size (17.6 mm).

 

Turkish Hazelnuts

The hazelnut is a type of nut that comes from the Corylus tree. It is mostly cultivated in Turkey and some surrounding countries but enjoyed all around the World.

 

Hazelnuts have a sweet flavor and are typically consumed as a whole (raw or roasted), or used as an ingredient in a variety of foods, especially in bakery products, snacks, chocolates, cereals, dairy products, salads, sauces, ice cream and other dessert formulations.

Like other nuts, hazelnuts are rich in nutrients and have a high content of protein, fats, vitamins and minerals.

 

There are many hazelnut varieties in Turkey that are characterized by their high quality, including high kernel percentage, high fat content and high pellicle removal, compared with other varieties grown all around the world.

 

Turkish Hazelnuts Health Benefits

Hazelnuts are very nutritious and healthful. The oil fraction is rich in oleic acid, phytosterols, Vitamin E, and squalene; this special composition may help diminish the risk of coronary and oxidative stress-induced diseases.

The nut contains a precious mix of synergistically acting antioxidants, among which are tocopherols and phenolics (especially tannins, essentially located in the brown skin); phytoestrogens, selenium, and squalene contribute towards improving the antioxidant network efficiency. 

Dietary antioxidants counteract free radicals, promoters of oxidative deterioration; the assumption is that hazelnut antioxidants might be a valuable aid against oxidative stress-mediated disorders and diseases, such as inflammatory, cardiovascular and neurodegenerative diseases, and cancer. Because of their richness in nutrients and their bioactive health-promoting compounds, there are good reasons for profitably including hazelnuts as part of a nutritious and functional diet.

The most abundant antioxidants in hazelnuts are known as phenolic compounds. They are proven to help decrease blood cholesterol and inflammation.

 

Raw Hazelnut Kernels | TS3075

Prepared by shelling hazelnuts with their outer membrane or by separating them from hard fruit shells, raw hazelnut kernel is the main product input of cream, chocolate and confectionery industries and, depending on its calibers and features, is classified into “class extra”,“class 1.”

This is commonly grown in the Ordu and Samsun provinces, and can be easily distinguished by its tick-leaf tissue and long, split husk. Its main defect is that it is sensitive to many diseases and pests.

Its can be used to; raw material for chocolate, confectionary industry and as a snack for the end user, also used as the raw material for processed and fully processed hazelnuts.

Çakıldak |TS3075

Çakıldak is also very suitable for industrial consumption due to its lower F.F.A (free fatty acid) content, longer shelf life. We would particularly emphasize the availability of “çakıldak” (or “delisaya” in the western Black Sea region), a variety of Turkish hazelnut (Corylus avellana L.) widely grown in middle and high altitudes and specific to our Ordu province, notorious for its adaptation to extreme climate and harsh soil conditions.

All of the Turkish hazelnuts skin by-product, being remarkably rich in phenolics, is proposed as an excellent source of natural and powerful antioxidants.

The most important feature distinguishing “çakıldak” from other hazelnut varieties is that it contains more antioxidants because of the thickest skin structure it has. This thick skin structure protects the hazelnut during crushing and reduces the disintegration rate. On the other hand, despite this protective structure, it is easily roasted and is a special product that can be easily separated from its skin when roasted.

Hazelnut in-shell

Different types of nuts are available in various calibers, from 12 millimeters to 22. Those with high internal productivity are very suitable for hazelnut processing industries and are grown intensively. It is prepared either in its shell or by salting with the shell crack open.

Roasted Hazelnut | TS1917

Roasted hazelnut is produced by applying heat to natural hazelnuts, thereby removing the skin partially or totally. Depending on specifications (low, medium, high roasted) its humidity level changes between 0.8- 3 per cent.

Its can be used as snack, in mixed nuts, bakery and chocolate and sweet cream products.

Diced Hazelnut | TS1917

Produced by cutting/crushing the natural hazelnut kernels and roasted hazelnuts into smaller pieces. 4-6% is the desired moisture level.
